Ingredients
1 tablespoon unsalted butter (for greasing the pan)
1 ¼ cups whole milk
3 large eggs
½ cup granulated sugar
1 tablespoon vanilla extract
⅛ teaspoon salt
½ cup all-purpose flour
2 cups pitted fresh cherries
Optional: Powdered sugar, for dusting
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish with butter and set aside.
In a mixing bowl, whisk together milk, eggs, sugar, vanilla, and salt until smooth. Gradually add the flour, whisking until just combined. The batter should be light and lump-free.
Spread the pitted cherries evenly across the bottom of the prepared dish.
Pour the batter over the cherries. Bake for 35–40 minutes, or until puffed and golden brown. A knife inserted in the center should come out clean.
Let the clafoutis cool slightly. It will deflate as it rests. Dust with powdered sugar before serving, if desired.
Notes
- Skipping the buttered pan – Clafoutis will stick without proper greasing
- Using canned cherries – Fresh or frozen (thawed and drained) are best
- Overbaking – This will dry out the custard
- Forgetting to pit the cherries – Always remove the pits to avoid a biting hazard
- Pouring the batter over wet cherries – Pat dry if using thawed frozen fruit
