Ingredients
For the Cowboy Butter Chicken:
2 boneless, skinless chicken breasts (cut into bite-sized pieces)
2 tablespoons olive oil
Salt and pepper, to taste
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
For the Cowboy Butter Sauce:
1/2 cup unsalted butter (1 stick)
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/4 teaspoon red pepper flakes (for a bit of heat, optional)
1 tablespoon lemon juice (freshly squeezed)
1/4 cup freshly grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)
For the Linguine:
12 ounces linguine pasta (or pasta of your choice)
Salt, for pasta water
Instructions
Bring a large pot of salted water to a boil and cook the linguine pasta according to the package instructions until al dente (usually about 8-10 minutes). Once the pasta is cooked, drain it and set it aside, reserving about 1/2 cup of pasta water to help loosen the sauce later.
While the pasta is cooking, season the chicken breast pieces with salt, pepper, paprika, garlic powder, and onion powder.
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is cooked through and golden brown on all sides. Once cooked, remove the chicken from the skillet and set it aside.
In the same skillet, reduce the heat to medium. Add the butter and let it melt. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic.
Add the oregano, thyme, and red pepper flakes (if using). Stir everything together, allowing the spices to bloom in the butter for another 1-2 minutes.
Stir in the lemon juice and Parmesan cheese, and cook until the cheese melts into the sauce, creating a smooth, creamy texture. Add the reserved pasta water to the sauce to reach your desired consistency, and stir until well combined.
Return the cooked chicken to the skillet with the sauce and stir to coat the chicken in the buttery mixture. Add the cooked linguine pasta to the skillet, tossing to combine everything evenly. If the sauce seems too thick, add a little more pasta water to loosen it up.
Taste and adjust seasoning with additional salt or pepper as needed.
Serve the Cowboy Butter Chicken Linguine hot, garnished with freshly chopped parsley and extra Parmesan cheese if desired. Enjoy!
