Ingredients
For the Cheesecake Filling:
4 oz (115g) cream cheese, softened
1 tablespoon powdered sugar
½ teaspoon vanilla extract
For the Sandwich Assembly:
4 slices of white sandwich bread, crusts removed
3 tablespoons strawberry preserves or jam (or use fresh diced strawberries)
2 tablespoons unsalted butter, for frying
Optional: powdered sugar for dusting, extra strawberry sauce for drizzling
Instructions
Step 1: Make the Cheesecake Filling
In a small mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Set aside.
Step 2: Prepare the Bread
Lay out your slices of bread and remove the crusts for clean edges. Using a rolling pin, gently flatten each slice until it’s slightly compressed and more pliable.
Step 3: Spread the Fillings
On two slices, spread a generous tablespoon of the cheesecake mixture. On the other two, spread the strawberry jam or preserves. If using fresh strawberries, layer them thinly on top of the cream cheese mixture instead.
Step 4: Assemble the Sandwiches
Press the two halves together to form a sandwich — one side with cream cheese, one with jam or strawberries. Press down gently to seal the edges.
Step 5: Seal the Edges
Use the tines of a fork to press and seal all around the edges, just like you would with a hand pie or ravioli. This prevents filling from leaking out during frying.
Step 6: Fry the Sandwiches
In a skillet over medium heat, melt 1 tablespoon of butter. Once bubbling, place the sandwiches into the pan. Fry for about 2 minutes per side, or until golden brown and crispy. Add the remaining butter when flipping or frying the second sandwich.
Step 7: Let Cool and Finish
Remove the sandwiches and place them on a paper towel-lined plate to drain. Allow them to cool slightly before cutting them diagonally.
Step 8: Garnish and Serve
Dust with powdered sugar and drizzle with extra strawberry sauce if desired. Serve warm for the ultimate flavor and texture.
Notes
- Not sealing edges properly – Filling will leak and burn during frying. Press all sides well with a fork.
- Using low-fat cream cheese – It won’t hold up as well to heat and may turn runny.
- Too high heat – The bread will burn before the filling is warm. Medium heat is perfect.
- Overloading with jam – Use just enough to flavor, not flood the sandwich.
- Skipping the roll-out – Flat bread gives better fry and helps seal.
