Instructions

  1. Prep the Corn: If using fresh, cook and cut kernels from the cob. For canned/frozen, drain well or thaw and pat dry.
  2. Mix the Base: In a large bowl, whisk together mayonnaise and sour cream until smooth.
  3. Flavor It: Stir in shredded cheese, green onions, jalapeño (if using), chili powder, garlic powder, salt, and pepper.
  4. Combine: Fold in the corn until evenly coated.
  5. Choose Your Serve:
    Cold Dip: Cover and refrigerate 30+ minutes to chill and meld flavors.
    Warm Dip: Transfer to a small baking dish, top with extra cheese, and bake at 350°F (175°C) for 15–20 minutes until hot and bubbly.
